SOUTHWESTERN PASTA SALAD
Ingredients:​

12 oz bowtie pasta

1 cup black beans

1 cup corn

2 cups cherry tomatoes, cut in halves

1 medium avocado
-
1/2 cup finely chopped cilantro
​
Dressing:
​
1 tbsp nutritional yeast
1 tbsp fresh lime juice
2 tbsp olive oil
1 tbsp water
2 cloves minced garlic
1 splash of agave syrup
1 tbsp white wine vinegar
salt and pepper
​
Directions: cook pasta according to the instructions on the package. In a large mixing bowl, combine all ingredients and stir them up well. Add the dressing and stir again. Place the pasta salad in the refrigerator for a couple hours and then it's ready to enjoy! Italian dressing works well too.
